The brown cock crab is one of Britain’s greatest treasures. The male (cock) crab has larger claws which results in more white meat. The female (hen) crab has smaller claws which results in a higher percentage of brown meat. Most brown hen crabs are shipped to Asia where the sweet brown meat is treasured.
